Leftover Lamb Stew

So today I arrived at the office, and I was told there is a decent portion of a lamb rack left over from a  meal last night. And That i should make a stew. You dont need to use lamb, its just what I had

So I headed over to the trusty woolworths to get some stuff for the stew. I sorta made it a moerby stew.

Ge had about 400g of lamb left. With that we added the following

1 onion

1 pack of baby potatoes

1 pack of spinnach

1 pack of round carrots

1 pack of cut mushrooms

1 bulb of garlic

and some Thyme, Coriander and some rich beef gravy power (about 3 tablespoons)

1 glass of red wine left over in the bottle from the previous night

I browned the onions in the pot, added in the potatoes,, then the meat, then the carrots, then the spinnach and I threw in my spices and stuff.

Let it simmer for 2 hours, and then up the heat so that it boils rapidly for another hour or so.

I made this very much like a poitjie, where everythingj is in layers. Try and keep it that way till the end, then give it a good stir though

For the Rice, I used Basmati rice. Simple to cook. Usually I take about 2 cups of water to 1 cup of rice. Bring the water to boil, add a dash of salt.lower temp, and add rice. let it simmer for about 20 minutes. Take off heat and wait for the water to be absorbed.

As usual, everthing was bought from woolworths, save the Lamb.

Creamy bean pasta/soup

At my previous company, this recipe became famous, and liked so much, that its on their internal Wiki. So I thought Id share it with you guys. It has many variations, but the base stays the same. This recipe doubles well, so when you need to cook for 40, just multiply until happy. This batch servers about 10.

Fry your onion in some water in a big pot. Add your Cans of beans, and let it simmer for about 5 minutes.Add in your pasta, Make sure there is enough water in the pot to cover everything, If not, add BOILING water. After about 20 minutes, add a tablespoon sweet basil, and a tablespoon of spice for mince or chicken stock, and a big dash of pepper to taste. Remember, the pepper taste comes out after it has simmered.

Wait until pasta is cooked completely. (the pasta will be soft).Just for safety wait 10 minutes more, and add the cream, let it simmer for 5 mins more, and serve with buns.

To give it more volume, ive added kidney beans, and peas. You can add any beans you want. Even fresh ones. I just use canned beans cause its quick, and due to the fact that I cook this at the office, thats important.

Just to recap, here are the ingredients.

Ingreedients :

1 x Tin Bakebeans in tomato sauce (for more volume add one more tin)

1 x Tin Greenbeans

1 x Tin Boer/Butter beans

1 x Pack of Pasta Shells (others dont cook as well)

6 x Garlic Cloves

1 x medium onion

1 x container of cream

Buns :-)
Spices :

pepper,Spice for mince/chickenstock,Sweet basil

Most things, as usual are avaliable from woolworths. The spice for mince is not avaliable from the place around the corner from my office, Really wish theyd get it, as I always forget to bring it in the morning.

So Today I made a Pasta, nice and healthy one. But tasty.

To start I took a bag of organic Fussili(get it from Woolworths, Its a wee more expensive, but really really tasty).You can use any pasta really, I just like that one. Threw it into a pot,with some boiling water and some salt.

The sauce is really simple. Chop up one onion, and half a bulb of garlic(I really like garlic), and brown it in a small saucepan. Chop up three odd mid sized tomatoes and add in and cook till nice and soft. Destone some green olives, and just throw them in.Throw in a bag of spinach.(I used the lovely bagged baby spinach from Woolworths, 200g i think) Put the lid on, and let the spinach go soft. Add in about a table spoon of Worcestershire sauce, a dash of salt and pepper, and I used some chicken stock just for some nicety. Let it simmer for a bit, and its ready. While its simmering, drain the pasta.

I served todays meal with the sauce dolloped on top, with chunks of a ‘boerenkaas’. I accidentally grabbed the wrong cheese, and it turned out to be awesome. Really really tasty.

Eat it while its still warm. It doesn’t work so nicely cold.

Just to recap, here are the ingredients. I got all of them from Woolworths as they are a couple houses down from my office. Its a pain. But thanks to them I can cook what I want when I want to. Would be nice if they got some more spices though :-)

1 pack pasta (preferably organic fussili)
3 tomatoes
1/2 bulb garlic
1 onion
200g Spinach
Cheese (I used boerenkaas)
1 bag of Green Olives

Spices
Chicken stock
mixed spice from Woolworths
salt + pepper
